Hi friends, it’s been a while, but I’m back on the blogosphere. April and the beginning of May were crazy busy and the most fun days which left little room for shooting delicious recipes and blogging about them. I also got terribly sick after Coachella, my body is not used to be surrounded by so much SMOKE and DUST and it took me out of commission for a good three weeks! But here I am back in my groove so to speak and I can’t wait to share this amazingly creamy, nutritious, spin on a shake I fell in love with on my trip to Coachella.

I know, I know Coachella was well over a month ago now but I’m still reliving my whirlwind experience! My sisters and I made the most out of our trip and made sure to make some fun pit stops along the way as we drove to Palm Springs from Los Angeles. It’s really not a bad drive at all and we made sure to leave super early (530AM – eek – not a morning person over here!) to avoid any LA or Chella traffic and we were super successful!

Our first stop was an attempt to see some poppies during the California Super Bloom, we were finally able to get enough rain for a proper spring here in Cali. We pulled off the freeway and parked near the Walker Canyon Trail in Lake Elsinore and started our little trek up to see the blooms. It was early when we arrived and a little overcast and as we made our way up the trail we realized the poppies needed the sun to actually bloom and open up, so we never saw any poppies but we did get to see some beautiful wildflowers and had fun hiking and exploring and doing what we do best, photoshoots!

We hopped back in the car and continued up the road to our next pit stop the Cabazon Dinosaurs! If you’ve never stopped here, it’s so fun, I recommend it! Not only do you get to stretch your legs and move a bit after being in the car, but you get to see giant life-sized dinosaurs! It was extremely windy when we went but it was still a fun pit stop.

Then we made our way to Hadley’s Health Market, known for their Date Shakes! I was so excited to try it and it lived up to the hype. So creamy and so sweet and chunks of delicious dates in every sip! I was in heaven sipping on that shake! The market itself is also super cute and has all the healthy organic treats any girl could ever dream up! Perfect place to grab snacks on your way into Palm Springs!

When I got back home after Coachella, I found myself craving a date shake and obviously had to create a FittyBritttty version! I mean just look at how amazing it looks in that picture! My version obviously had to have some greens in it though because what’s a proper smoothie without a little fiber, after all, that spinach will actually help keep you fuller longer! I hate drinking a smoothie and feeling hungry an hour later, so spinach was key here.

As with any smoothie, this is great pre or post-workout, as a quick grab and go breakfast or even as a quick lunch or dinner! It’s filled to the brim with nutrients and will satisfy that sweet tooth, too! Enjoy!

Green Banana Date Shake with Collagen

Inspired by Hadley’s Banana Date Shake
Serves 2, or 1 if you’re super hungry! (me, always!)

INGREDIENTS

1 cup homemade cashew milk/almond milk or milk of choice (Like a thicker shake? Reduce the amount of milk to 1/2 cup)
1 cup frozen banana slices
1 cup baby spinach
4 Medjool dates, sliced in half, pit removed
3 scoops Dr. Axe Collagen Protein or protein of choice (equal to about 20 grams of protein)
1 tbsp coconut oil/coconut butter (for healthy fats)
1 cup ice cubes

INSTRUCTIONS

Combine all ingredients in the order listed in your Vitamix or high powered blender in the order listed. Secure the top of your blender and blend on low, working your way up to the highest speed until perfectly combined, about 1 minute. Remove top and taste for sweetness and thickness, add 1-2 more dates if you want it sweeter or more frozen banana, add more ice to thicken and more milk to thin out! Reblend if necessary or enjoy it immediately. Serve in your favorite glass, pop a straw into it and slurp back until you hit the bottom!
