Vanilla Latte Protein Smoothie

As the weather really starts heating up here in California (although we’ve been having major June gloom, which is the worst!) I love switching over from my hot lattes to iced versions of my favorite coffee drinks. I feel like this is a common theme among coffee drinkers! My go-to coffee order since starting to drink coffee was and still is always a vanilla latte. I love the vanilla flavor combined with the creamy milk, nothing better in my opinion.

But my order has evolved over time, I used to be the girl at Starbucks ordering a skinny vanilla latte and now I order a vanilla latte with almond milk and half sweet, so yes still THAT girl. Times have really changed! I used to be so concerned with the calories and the carbs I was drinking and now I’m 100% more concerned about the type of sugar I’m drinking. While the SVL has fewer calories and fewer carbs it’s actually worse for your body. By ordering the real stuff but cutting the amount they use in half I’m getting a more natural sweetness (although still not sure it’s good for you!) but hey I feel like it’s still a win! What is your go-to coffee shop order?!

After opening my Instagram app last week and realizing it had updated without me even knowing and I magically had the “swipe up” tool on Instagram Stories (boy was I excited about that!) I linked to a few of my smoothie recipes I have up on the blog for you babes to check out. I quickly realized two things: 1. I only really had 3 smoothie recipes up on my blog (which is insane because I drink a smoothie every single day) and 2. none of my recipes had any coffee in them. I then quickly got many DMs and comments requesting more smoothie recipes on my blog!

And in turn, the creation of this creamy Vanilla Latte Protein Smoothie was born! This is a smoothie I will make when I’m in need of a little pick me up, either in the morning as a breakfast smoothie or after a workout that has really wiped me out! This baby is packed with protein from the Vanilla Vital Proteins Collagen Whey and natural sweetness from the dates! Also if you haven’t tried a Nespresso Espresso pod, you’re seriously missing out on life! I cut down on my coffee shop outings when I got my Nespresso, tastes just as good if not better than a coffee shop! This smoothie will keep you fueled for hours and will also give you that kick of caffeine you need to get through your day like the boss babes you are! So where are my coffee lovers at?! This smoothie is for you, enjoy!

Vanilla Latte Protein Smoothie

Ingredients:

1 cup homemade nut milk (I used almond macadamia nut milk and I’ve also used cashew milk)
1-2 shots of Nespresso Altissio Espresso
2 scoops Vital Proteins Collagen Vanilla Whey or Vanilla protein powder of choice
1 tbsp Vanilla extract
2-3 dates or honey for a touch of natural sweetness
1-2 cups ice (for thicker smoothie use more ice)

Method:

Combine all ingredients in the order listed into a high-powered blender, like a Vitamix (shop mine here) and secure the lid. Start by blending on low (speed 1) and then moving the blender slowly up to the max speed (10) and blend on high for 1-2 minutes. Once blended to your liking, pour immediately and enjoy either as is for a thick smoothie or if you used less ice you can pour it over ice and drink like an iced coffee! Either way, it’s a delicious and nutritious coffee drink! Serves 1 large smoothie or 2 small ones!
