Have you ever woken up craving chocolate first thing in the morning?! I know it definitely happens to me, hello period week! And it’s not always a great idea to start your day with a chocolate bar so I have you covered with the most magical chocolate coconut overnight oats that’s so chocolatey and also healthy for you! Not only will this satisfy your chocolate cravings but having overnight oats prepped and ready in your fridge makes this an easy meal prep breakfast that you can grab and devour in minutes.
With over 13 grams of fiber, these oats will keep you fueled for hours. The addition of all the healthy fats (coconut, peanut butter, and the DIY almond milk) will help fuel your brain as well! And the cocoa collagen and cocoa nibs will satisfy those chocolate cravings!
Chocolate Coconut Overnight Oats
Ingredients:
3/4 cup unsweetened almond milk (DIY recipe here)
1/2 cup rolled gluten-free oats
1 scoop Vital Proteins Cocoa & Coconut Water Collagen Whey
1 tbsp chia seeds
1 tbsp unsweetened coconut flakes
1 tbsp Wild Friends Chocolate Coconut Peanut Butter
1 tsp Vanilla extract
1 tsp organic cocoa nibs
***If you want this to be sweeter, feel free to add a tbsp of maple syrup or honey, I’ve done it both with and without and find it sweet enough without! And don’t forget to get creative on the toppings, I topped mine with more coconut chips, cocoa nibs, and some walnuts, so delish!
Method:
Combine all ingredients in a container with a lid (I love my weck jars!) make sure you combine well with a spoon so the peanut butter gets evenly distributed. Then let sit in the fridge overnight (or for at least 4 hours!). So simple!
